Chunky monkey overnight oats

  • 1 medium banana, diced
  • ½ cup rolled oats
  • 2 tbsps chopped dates/ chocolate chips
  • 2 tbsps chopped walnuts
  • ¾ cup almond milk or other
  • 1 tbsp milled flaxseed
  • 1 tsp maple syrup optional


  • Combine all ingredients in a container with only half of the banana.
  • Mix thoroughly, cover and transfer to the refrigerator.
  • Serve within 24 hours topped with the remaining banana and almond butter.
